K-Bano Breakfast Sandwich

This is a mix between the classic Korean street egg sandwich and the Cubano. The Spam and the cucumber kimchi make for a fresh take on the classic sandwiches.

What You’ll Need

  • 1 small carrot, julienned

  • ½ cup cabbage, julienned

  • 1/4 cup rouch chop scallions

  • 2 eggs

  • Splash of milk

  • Salt & pepper

  • 2 thin slices Spam

  • 1 Tbsp butter

  • 2 slices American cheese

  • 2 slices sandwich bread

  • 2 Tbsp cucumber kimchi

  • Kewpie mayo (drizzle)

  • Sriracha (drizzle)

  • Pinch of sugar

  • Wax paper for wrap

How to Make It

  1. Prep Veggie Egg Mix

    • Whisk eggs + milk + salt/pepper.

    • Fold in carrot & cabbage; set aside.

  2. Sear Spam & Start Bread

    • Melt butter in non-stick pan over medium.

    • Fry Spam until golden; flip, top each slice with cheese.

    • Immediately place bread slices (dry side down) on top of the melting cheese.

  3. Add Egg & Cook Through

    • Pour egg mixture around bread edges, letting it spread.

    • After ~2 min, butter exposed bread tops and flip the whole unit.

  4. Sauce and Flavor

    • Add rough chop scallions

    • Scatter cucumber kimchi over the toast.

    • Zig-zag Kewpie and Sriracha; dust with sugar.

  5. Fold & Finish

    • Tuck stray egg under the bread so everything’s contained.

    • Lift, wrap snugly in wax paper, press lightly to spread sauces.

    • Halve and serve hot.
