TINY GRANDMA'S MICROWAVE MOCHI

Makes 6

  • 1 cup sweet rice flour, or mochiko

  • ¼ cup sugar

  • ¾ cup water

  • A few drops pink food coloring, or 1 Tbsp Strawberry Quik

  • Cornstarch, for dusting

  • Vanilla ice cream

  • Nutella

  • 3 strawberries, sliced thin.

SCOOP

Scoop 6 small balls of ice cream onto a plate. Freeze, at least 1 hour. While waiting, whisk flour, sugar, water and food coloring in a microwave-safe bowl until smooth and pink. If you're using Quik, cut the sugar to 2 Tbsp. Cover loosely.

MICROWAVE

Microwave the mixture for 1 min. Stir. Microwave 1 more minute. Stir. It should look glossy and stretch like taffy. Turn it out onto a board dusted heavily with cornstarch. It is very sticky. Let it cool until you can touch it.

CUT

Cut into 6 pieces. Flatten each into a little circle. Spread a thin layer of Nutella, lay in 2 strawberry slices, drop an ice cream ball on top.

FREEZE

Freeze 30 minutes.

ENJOY!

Let them sit out 5 minutes before eating so the dough goes soft again.
